Everything Bagel Frittata

Ingredients
  

  • 1 tbsp butter
  • 12 large eggs
  • 1/2 tsp salt
  • black pepper to taste
  • 1 7 ounce tub smoked salmon cream cheese
  • 1 tbsp capers drained
  • 1 tbsp Everything Bagel seasoning

Method
 

  1. Turn your oven on broil and move a rack to the top of the oven.
  2. Melt the butter in a nonstick skillet. Whisk the eggs with the salt and pepper in a medium bowl. Pour the eggs into the skillet once the butter has melted and begins to bubble.
  3. Using a spoon, place dollops of the cream cheese around the skillet until the container is empty. Sprinkle the capers evenly over the top of the frittata.
  4. Once only the top of the frittata is still runny, remove the pan from the heat. If the handle is plastic, wrap it in 3 layers of aluminum foil, then place under the broiler. Broil until the top is set and begins to turn golden brown, about 2 minutes.
  5. Remove from the oven and immediately sprinkle with the Everything Bagel seasoning.
